I am Philippe Farinelli, 50 years old. I am the owner, winemaker and oenologist of Domaine Saparale since 1998 which has acquired over the years a solid reputation on the island and beyond.
Our oil is a small production varying according to the years around 1500 liters.

From Corsican varieties (Zinzala, Oliva Nera…) we harvest the olives turning black by combing them manually on the tree which gives our oil both a fruity taste specific to black olive oils and a slight ardence and aromatic richness, due to the harvest on the tree.
Our estate is located in the countryside in the heart of the Ortolo Valley in the Sarten region.

I stopped my schooling in 9th grade, to work with my parents who have a lodge in the mountains.
My name is Roger Philippe Maurizi, I am 41 years old. I stopped my schooling in 9th grade, to work with my parents who have a lodge in the mountains, work that I continue to do since then during the winter season from January to March depending on the snow cover and from May to the end of September. I really wanted to start farming since my job allowed me to do so. The olive tree was for me an obvious choice. I followed the training to be able to settle, and it is in 2008 that I concretized my dream and thus planted 1244 olive trees, variety ghjermana of casinca on a little less than 4h.
In 2020, at the International Competition in Athens, our olive oil received a double gold medal.
Our olive oil is an extra virgin olive oil PDO, made from olives picked from the tree and selected with care. Cold extracted, this exceptional olive oil will reveal its delicate aromas such as tomato, green grass, almond, pepper and a medium spiciness. It is powerful in taste, which is the undeniable sign of its great quality. It goes perfectly with all types of dishes. In 2020, at the International Competition in Athens, our olive oil received a double gold medal, the result of many years of work.
Our estate is located in Linguizzetta, between the sea and the mountains.

We grow 7 varieties of olives and produce two intense green fruity oils.
We grow 7 varieties of olives and produce two intense green fruity oils: Ardente and Virdura. The Ardente is characterized by its artichoke and peppery aromas while the Virdura is characterized by its herbaceous taste and its flavors of endives and fresh almonds. In order to guarantee a high quality of oil both in its physical-chemical and taste characteristics, all the olives are harvested from the tree at the beginning of their maturity and sorted by hand.

Our olive trees are located in the commune of Pianottoli, between the sea and the scrubland, one kilometer from the coast. The olive grove is on a south-facing hillside, on a granite arena of soil: shallow, fertile land. This semidesert area of the extreme south of Corsica is strongly exposed to the wind and receives little water. In this preserved area, the choice of BIO was made naturally and without appeal for us, by environmental awareness and love of nature.

I am an olive producer, miller and professional olive oil taster (ONAOO school). Our farm is situated one the east coast of Corsica on a 35ha domain and our trees planted in 2008 with a majority of local cultivars. Our mill is a two phase mill upgraded with recent innovative extraction tools. Our extra virgin olive oil has won several prizes including the Mario Solinas prize at the IOC.

It benefits from a mild climate, sun and water as Corsica has many water sources and being a mountain has also everlasting snow. It is scarcely populated and the closest town with high density population is Bastia at 70 km away. The island lives mainly from tourism.

My name is Sophie ALFONSI, I am 42 years old and I work with passion our olive trees with the help of my father Jean. François and my sister Virginie. Nature lover, I undertook a vocational training in olive growing and certifying 7 years ago to be able to exploit the olive grove created by the long passionate grafting work carried out by my father 10 years ago. I have been installed for 3 years and the farm is evolving towards a family farm with pleasure since we now work there as a family with the sister and my father.
We have 600 olive trees resulting from the grafting of wild oleasts in the Southern Ghjermana variety known as 'aliva nera'.

This work of passion today results in the production of a quality extra virgin olive oil which fills us with pride. Out of conviction and respect for nature, we have been producing using organic production methods since the creation of the olive grove. We are in the process of organic certification with ecocert. This year we produced 350 liters of quality extra virgin olive oil harvested from 310 olive trees in production.
