I am Philippe Farinelli, 50 years old. I am the owner, winemaker and oenologist of Domaine Saparale since 1998 which has acquired over the years a solid reputation on the island and beyond.

Our oil is a small production varying according to the years around 1500 liters.

Our oil is a small production varying according to the years around 1500 liters. From Corsican varieties (Zinzala, Oliva Nera…) we harvest the olives turning black by combing them manually on the tree which gives our oil both a fruity taste specific to black olive oils and a slight ardence and aromatic richness, due to the harvest on the tree.

Our estate is located in the countryside in the heart of the Ortolo Valley in the Sarten region.

Our estate is located in the countryside in the heart of the Ortolo Valley in the Sarten region, at the foot of the Cagna massif, in a wild environment where only a few vineyards and extensive livestock farms exist side by side with nature in its raw state and incredible biodiversity. Our estate is certified HVE.
